Description
There is some permission problem, I was not able to load the Natural Earth shp folder as shown in GeoServer quickstart.

We need to apply the same permissions to data folder. User needs to be able to write in natural earth folder

There is a note stating that this will not work on the live session. My bad.

the quickstart does not say where to save the .sld files.. If you try save the .sld files in /usr/local/share/data/natural_earth2/ then uDig fails silently, which is a uDig problem, but if you simply save the .sld in your home directory, it all works fine.
